Description
Made in our Cambridge kitchen using Vermont rabbit, locally raised pork, a touch of Madeira, and studded with California pistachios. Each pâté is wrapped in Prosciutto di Parma and encased in Madeira aspic. This pâté is a customer and staff favorite, and was winner of a Good Food Award in 2012.
Ingredients: Rabbit, pork shoulder, pork fat, pancetta, rabbit liver, pork liver, salt, pepper, curing salt, cream, eggs, white wine, rum, Madeira, sherry, pâté spice, garlic, shallot, tarragon, parsley, thyme, pistachios, lemon zest, fennel seed, chili flake, wrapped in Prosciutto di Parma and encased with a Madeira aspic.
Don't forget the crusty baguette and cornichons!
