This sweet, cured Italian ham bears the honorable mark of the Consorzio del Prosciutto di Parma, signifying its exceptional quality and adherence to the rigorous curing processes. Made by the 4th-generation family-owned and operated company Pio Tosini, it is aged for over 660 days (more than 260 days longer than typical prosciutto production). This allows for slow and even salt penetration, resulting in a distinctive sweetness. Each ham is personally selected by the company and is trimmed and deboned by hand. There are only four ingredients that go into this ham, and they are Italian pigs, salt, air, and time. 'Legato' refers to the ham's round shape: it's rolled rather than pressed. 
 
This is our most popular age of Prosciutto di Parma. We hand-slice it on our slicer to order and our mongers are trained to dial it in at just the right thickness.
