Farro refers to the grains of three wheat species, which are sold dried and cooked in water until soft.
It is widely used on cold vegetable salads, legume soups and stews; boiled is a delicious side dish for steamed shellfish, grilled bluefin tuna, and boiled octopus accompanied by a light fruity extra virgin olive oil.
