A beautiful French olive with origins in Collias, a village just north of Nimes in Provence, but currently grown both in Provence and in some parts of Languedoc. These olives are typically harvested while still green, and they are at their best when they are unpasteurized and still have their crisp texture, lightly nutty flavor, and rich, almost buttery finish. Try a bowl of these alongside your glass of Pernod.
