This pasta is made on the same farm that grows the grain used to make it, something you almost never see!
Pipe rigate is a hollow curved pasta that looks similar to a snail shell. It has a wide opening at one end and the other end has a flattened opening so that it is mostly closed. This pasta is made with whole wheat flour and is great used in a variety of classic pasta dishes, but we particularly love it paired with creamy sauces so it collects inside the shape.
The Agostas, the family behind the pasta brand with the iconic bright yellow bags, Feudo Mondello, has been farming their 670 acres of land in the Belice valley of Sicily since the mid-1800s. It is there where they grow the durum wheat that is transformed into flour and pasta onsite. To create pasta that retains the flavor of the wheat and has the right “rough” texture needed to cling to sauce, they grind the grain using a stone mill, extrude the pasta through bronze dies, and let it dry very slowly at a set temperature.
