Located in Saint-Pierre-de-Broughton, a lovely little village located an hour south of Quebec City in the Chaudière-Appalaches region of Canada, La Villa produces artisanal vinegars using locally sourced ingredients. Their business began with a longing to taste vinegars that are representative of Quebec's unique terroir, climate, and history. Think ingredients like maple syrup, honeys from native flowers, Nordic berries, etc.
La Villa's property houses their vinegar production facility as well as large gardens (that are farmed organically) where they grow some of the ingredients they use. Other wild ingredients, like chokecherries (Prunus virginiana) and highbush cranberries (Viburnum trilobum), are harvested on the property and surrounding areas. The rich biodiversity of their area inspires them with new ideas and fresh vinegar recipes.
The artisan behind the vinegars is Jean-François Pelchat. His work is impressive given that he is mostly self-taught; his expertise was developed from conducting personal research and experiments. Despite winning multiple awards for his vinegars, he is always working to perfect his art.
Our owner, Julia, discovered La Villa's vinegars while judging the USI Vinegar Competition. The competition is judged blind; however, she loved the vinegars she tasted so much that she asked the organizers if she could be connected with the producer after the competition was over.
After forming a relationship with them, Formaggio Kitchen became the first company to import La Villa's vinegars into the United States, and their vinegars are exclusive to our shops.
