When sourcing tinned fish, we look for producers that practice sustainable fishing as well as ones that work in an artisan fashion, whether that be by using traditional methods, operating at a small scale, or both.

Unusual Tins

This month we’ve curated a collection of tins that we consider more ‘unusal,’ featuring seafood that you don’t regularly see on the shelf.

IASA Branzino Fillet

Branzino (also known as Mediterranean sea bass) iis known for its pristine white fillets and delicate, slightly sweet flavor. To make this delicacy, the folks at IASA—producer of some of our favorite Italian anchovy products—start with sustainably farmed branzino fished from waters off the coast of Campania. The fish is cleaned, gently grilled and hand-packed in tins with mild olive oil, which allows the subtle smokiness and nuanced flavor of the fish to come through. IASA’s recipe is homage to the tradition of fisherman grilling fresh-caught branzino and drenching the fillets with olive oil.

Minnow Cod Liver

Cod liver is the foie gras of the sea! It’s fatty and rich, with a soft, silky, spreadable texture. Minnow sustainably sources theirs from the clear, cold waters of Iceland’s Westfjord region. Wild cod is caught and brought to the cannery in Isafjordur. While the filets of the fish are prepared to be sold fresh, the livers are preserved through canning. The liver is cut into small pieces, seasoned with salt, and in the canning process its rich oil is expelled and fills the can. This rich, buttery delicacy is full of Omega-3s and both Vitamins A and D. Spread it on toast with sea salt, lemon, and herbs.

Armatore Swordfish Fillets in Olive Oil

This is a true Mediterranean delicacy: premium-quality swordfish fillets are delicately cooked and preserved in high-quality olive oil to enhance their natural flavor and firm texture. Armatore is based in Cetara, Italy, an ancient fishing village nestled between the waves and rocks of the Amalfi Coast, where fishing is more than a trade: it is an art, a culture, and a legacy passed down from generation to generation.

Ekone Smoked Oysters

This tin contains Pacific oysters that are grown on Ekone's farms in Willapa Bay (located on the coast of Washington state). They are grown using the long-line method to promote the highest quality oyster, and ensure they are always free of sand and grit. They are harvested fresh then brought to the Ekone cannery in Bay Center, WA, where the oysters are steamed and opened, then brined in small batches. The brined oysters are then placed meticulously on stainless steel racks and smoked using maple chips. The result are succulent oysters with a lovely smoky flavor.

The membership is $75 per month. You can purchase a recurring membership where you will be billed monthly or you can purchase a single month or pre-pay for 3, 6, or 12 months.

Making changes to your subscription is easy. Just log on to your Formaggio Kitchen account and hit “Manage Subscriptions.” There you will find options to change your delivery address, skip a month, cancel your subscription, and/or update your billing information.

We ship out the club packages the second Wednesday of each month. While we can’t accommodate a custom ship date, you can skip a month by logging into your Formaggio Kitchen account.

While we can’t customize what comes in the monthly selection, as a member you can add whatever products you’d like to take advantage of the free shipping that comes with your membership. Purchase additional items through the club portal and we’ll consolidate it all into one box to be shipped the first full week of the month.

Yes. If you don’t want all your items to be consolidated into one shipment you’ll need to place a separate order. Please note that in order to take advantage of your free shipping as a member all items must be consolidated into the monthly club shipment.

Tinned fish has a long shelf life unopened. Once opened, we recommend storing it in the fridge and consuming it within a week.

If you’re using our prepaid option you can apply a gift card to your purchase. However, unfortunately, we can’t take gift card payments for our monthly recurring memberships just yet.

Orders must be placed the Sunday before the second full week of the month in order to be added to your monthly shipment.
