When sourcing tinned fish, we look for producers that practice sustainable fishing as well as ones that work in an artisan fashion, whether that be by using traditional methods, operating at a small scale, or both.

Anchovies

What’s not to love about anchovies? These tiny fish back a meaty and savoy umami punch and can be preserved in a variety of ways. With this month’s selection, we’ve highlighted three different preservation methods that illustrate the versatility of this little fish.

Regalis Boquerones (Marinated White Anchovies)

These succulent white anchovy filets are pickled in vinegar, making them irresistibly zesty. Caught in the Cantabrian sea off the northern coast of Spain and meticulously deboned, they are hand-packed in a balanced vinaigrette with zero added preservatives. Naturally umami-rich and ready to eat, lay them atop buttered sourdough or a Caesar salad, or build a plate of gildas by skewering them on a toothpick with a Gordal olive and Piparra pepper. Note these must be refrigerated, both before and after opening.

Armatore Salted Anchovies

Italian tinned fish producer, Armatore, exclusively chooses the largest anchovies that are caught near their home on the Amalfi Coast, for salt preservation. They are salted and packed into 'terzigni,' chestnut wood casks, where they are aged for a minimum of 8 months. These anchovies pack a punch: We recommend rinsing some of the excess salt off before enjoying. They can be enjoyed on buttered toast or used in a variety of culinary applications.

Armatore Anchovies in Oil

These anchovy fillets are fished at night and processed fresh following the ancient techniques of Cetara, on the Amalfi Coast. They too are salted and aged in casks, however, once the maturation process is complete, the anchovies are cleaned of salt, deboned, and prepared for preservation in olive oil. They can be enjoyed on buttered toast, too, or used to add rich umami flavor to your dishes: pasta, salads, and other Mediterranean recipes.

The membership is $75 per month. You can purchase a recurring membership where you will be billed monthly or you can purchase a single month or pre-pay for 3, 6, or 12 months.

Making changes to your subscription is easy. Just log on to your Formaggio Kitchen account and hit “Manage Subscriptions.” There you will find options to change your delivery address, skip a month, cancel your subscription, and/or update your billing information.

We ship out the club packages the second Wednesday of each month. While we can’t accommodate a custom ship date, you can skip a month by logging into your Formaggio Kitchen account.

While we can’t customize what comes in the monthly selection, as a member you can add whatever products you’d like to take advantage of the free shipping that comes with your membership. Purchase additional items through the club portal and we’ll consolidate it all into one box to be shipped the first full week of the month.

Yes. If you don’t want all your items to be consolidated into one shipment you’ll need to place a separate order. Please note that in order to take advantage of your free shipping as a member all items must be consolidated into the monthly club shipment.

Tinned fish has a long shelf life unopened. Once opened, we recommend storing it in the fridge and consuming it within a week.

If you’re using our prepaid option you can apply a gift card to your purchase. However, unfortunately, we can’t take gift card payments for our monthly recurring memberships just yet.

Orders must be placed the Sunday before the second full week of the month in order to be added to your monthly shipment.
