Wherever you go to eat in Puglia, a bowl of taralli will be the first thing on the table - they offer a great way to whet the appetite and to get a sense for the quality of the meal to come.
These taralli have simple ingredients: Tipo 00 flour, extra virgin olive oil, white wine, vegetable oil, salt, fennel seed, and natural yeast. They are cooked to perfection so that they have a great crunch and a lasting flavor.
