We discovered this wonderful producer of Balsamico at Salon del Gusto in Turin Italy.  In addition to their Aceto Balsamico Tradizionale di Reggio Emilia, they produce a number of other amazing balsamic products including this Condimento Balsamico. 

Condimento Balsamico is made from the same cooked must (Lambrusco and Trebbiano grapes) used for producing traditional balsamic vinegar. The difference is in the aging, condimento is aged between 5 and 7 years rather than the 12 years specified as the minimum for the traditional balsamic. 

The result is a brighter balsamic with more sugar and a less developed woodsy flavors. Excellent for drizzling over grilled meats or finishing pasta or risotto dishes.

    I thought I tasted a great balsamic vinegar before but not until I tasted this particular one did I know what I was missing! This is best described as a taste of heaven. If you enjoy balsamic vinegar, you MUST try this brand. Their ESSENZA is also a must-try (around the same price but only 100ml).
