Mill Valley Pasta Co is located in California. They produce super creative pasta shapes and flavors, some of which are exlusive to us, like this Mafaldine made with grano arso (toasted flour).
From the producers: "Named for Princess Mafalda of Savoy (can you imagine being named Mafalda? Seesh. Playground must have been BRUTAL), these ribbons will be perfect for your meat ragus, sugos, and sauces. The waves on the edges catch extra sauce. Much like not being able to pick a favorite child, we could never pick a favorite pasta, but this one is our favorite.
To make our Grano Arso pastas, we use 60% organic semolina and 40% organic semolina that has been roasted in the oven to a deep chestnut brown. This develops of depth of flavor reminiscent of toasted popcorn, grilled bread, and almonds."
This pasta is vegan friendly, but not gluten free.
