Lo Brusc Montagne (Mountain) honey is made from the nectar of wildflowers blooming in high mountain pasture during the summer. This batch is composed mainly of oak, wild thyme, Savory and wild lavender nectar.

The texture is spreadable and the flavor is deeply woodsy with hints of the thyme. Excellent as an accompaniment to medium-firm goat's milk cheeses like Chabichou de Poitou, or stirred into a hot cup of strong Assam tea.
