Made in our Cambridge kitchen with chicken livers, butter, duck fat, brandy, cream, eggs, corn starch, shallots, white pepper, and thyme, and topped with cornichons in madeira aspic.
This mousse is rich and flavorful with a silky texture. The perfect thing to enjoy on a crusty baguette with a few more cornichons on the side.
