Formaggio Kitchen Chocolate Club

Expand Your Palate (and Sweet Tooth) Each Month!

Our chocolate selection at Formaggio Kitchen is thoughtfully curated with an emphasis on working with bean-to-bar producers. Bean-to-bar producers make their chocolate from scratch, starting with the raw cacao beans and controlling the entire process, from sourcing to the final bar. We value this approach to chocolate making because it emphasizes quality, transparency, and a direct relationship with cacao farmers. The resulting chocolate bars are often made in small batches and offer unique flavor profiles that can be tied to a single origin of cacao.

Our Chocolate Club is perfect for the chocolate lover looking to expand their palate and discover new favorites.

August 2026 Selection

Peru

This month we’re highlighting a single cacao region: Peru. Peru houses nearly 60% of the world's cacao varieties. Thus, there is a lot of diversity of flavors that can be found in this single origin.

Godsend Urubama Valley Peru 65% Dark Chocolate Bar

Godsend is a small bean-to-bar chocolate maker (and paper maker) based in Friendship, ME. Every step of their process is done by hand, including wrapping their bars in the traditional Japanese mulberry paper they also produce in their studio. This bar has notes of Graham cracker, juicy apple, and fresh cut hay.

Goodnow Farms Ucayali Peru 70% Dark Chocolate Bar

Goodnow Farms, based in Massachusetts, sources the cacao for this bar from the jungles of Peru. It's named after the Ucayali river, one of the major headwaters of the Amazon, and the farmers living along its shores grow several varieties of fine flavor cacao. They bring the cacao on boats to Goodnow Farms’ partners at Ucayali River Cacao, where the beans are expertly fermented and dried. This extremely well-balanced dark chocolate bar is floral and herbal, with notes of lemon verbena and fig.

Goodnow also freshly presses the cocoa butter for this bar from the same Ucayali beans they use to make the chocolate, resulting in intense single origin flavor and exceptional smoothness. They are one of the only chocolate makers in the country to press their own cocoa butter, and it makes a world of difference in flavor.

Somerville Chocolate Chuncho Peru 75% Dark Chocolate Bar

Somerville Chocolate, a tiny operation out of Somerville, MA, uses cacao grown by Efrain Puma in Quillabamba, Peru (near Cuzco) to craft this dark chocolate bar. Chuncho is a cacao variety native to this region of Peru. This cacao gives the chocolate bar fruity notes of raisins.
