Our chocolate selection at Formaggio Kitchen is thoughtfully curated with an emphasis on working with bean-to-bar producers. Bean-to-bar producers make their chocolate from scratch, starting with the raw cacao beans and controlling the entire process, from sourcing to the final bar. We value this approach to chocolate making because it emphasizes quality, transparency, and a direct relationship with cacao farmers. The resulting chocolate bars are often made in small batches and offer unique flavor profiles that can be tied to a single origin of cacao.

This month we’re highlighting bean-to-bar chocolate makers who are based in our home state of Massachusetts.
Somerville Chocolate’s Smoked Ecuador 65% Dark Chocolate Bar
This 65% cacao dark chocolate bar is made with Ecuadoran cacao that is smoked over apple wood prior to refinement. The resulting chocolate bar has a distinct yet not overpowering sweet smokey flavor that mingles with that of the chocolate. For those who are familiar with Papua New Guinea cacao (also known for its smokey character), this is entirely different.
Somerville Chocolate, based in Somerville, MA, was started in the home kitchen of Eric Parkes as both a labor of love and a quest to better understand (and master) the art of chocolate making. Our relationship with Eric started when we signed up to receive monthly deliveries of his chocolate experiments. By way of his detailed notes, we learned about the process along with him. After several months of perfecting a few recipes, we started to sell his bars in our shops. To this day, Eric’s bars are made in extremely small batches of no more than 120 bars.
Goodnow Farms Ucayali Peruvian 70% Dark Chocolate Bar
The cacao for this multiple award-winning chocolate bar comes from the jungles of Peru. It's named after the Ucayali river, one of the major headwaters of the Amazon, and the farmers living along its shores grow several varieties of cacao. They bring the cacao on boats to Goodnow Farms’ partners at Ucayali River Cacao, where the beans are expertly fermented and dried at their facility. Goodnow also freshly presses the cocoa butter for this from the same Ucayali beans they use to make the chocolate, resulting in a well-balanced chocolate bar that’s floral and herbal, with notes of lemon verbena and fig.
Goodnow Farms, run by couple Tom and Monica in Sudbury, MA, makes all of their chocolate at their 225 year old farm. They start with cacao beans and sugar, and perform every step of the chocolate making process in-house, including carefully hand-wrapping each bar. They’re also one of the only chocolate makers to make and use their own freshly pressed, single origin cocoa butter in their chocolate. Doing this is time consuming and difficult, but the result is exceptionally smooth and intensely flavorful chocolate.
Taza 85% Super Dark Chocolate Disk
This dark chocolate disk is made with 85% stone ground, organic cacao. The result is chocolate with a bold, intense cacao flavor and a lovely textured mouth feel.
Taza Chocolate, based in Somerville, MA, was founded in 2005 by husband and wife team Alex Whitmore and Kathleen Fulton. Alex took his first bite of stone ground chocolate while traveling in Oaxaca, Mexico. He was so inspired by the rustic intensity that he decided to create a chocolate factory back home in Massachusetts. He learned to hand-carve granite mill stones to make chocolate that is less processed, allowing Taza’s Direct Trade cacao to shine.

The membership is $75 per month. You can purchase a recurring membership where you will be billed monthly or pre-pay for 3, 6, or 12 months.
Making changes to your subscription is easy. Just log on to your Formaggio Kitchen account and hit “Manage Subscriptions.” There you will find options to change your delivery address, skip a month, cancel your subscription, and/or update your billing information.
We ship out the monthly club packages the 2nd Wednesday of each month. While we can’t accommodate a custom ship date, you can skip a month by logging into your Formaggio Kitchen account.
Our monthly club packages ship the 2nd Wednesday of each month. If you purchase mid-month your first shipment will be shipped the following month.
Your shipment will arrive the 2nd full week of each month.
While we can’t customize what comes in the monthly selection, as a member you can add whatever products you’d like to take advantage of the free shipping that comes with your membership. Purchase additional items through the club portal and we’ll consolidate it all into one box to be shipped the first full week of the month.
Yes. If you don’t want all your items to be consolidated into one shipment you’ll need to place a separate order. Please note that in order to take advantage of your free shipping as a member all items must be consolidated into the monthly club shipment.

Yes, you can skip a month and/or change your shipping address by logging into your Formaggio Kitchen account.
Chocolate has a long shelf life. However, to experience optimal freshness and peak quality, we recommend consuming it within 6 months of opening.
If you’re using our prepaid option you can apply a gift card to your purchase. However, unfortunately, we can’t take gift card payments for our monthly recurring memberships just yet.
Orders must be placed the Sunday before the second full week of the month in order to be added to your monthly shipment.
Yes! You can gift a recurring subscription or pre-pay for 3, 6, or 12 months.
