Formaggio Kitchen Chocolate Club

Expand Your Palate (and Sweet Tooth) Each Month!

Our chocolate selection at Formaggio Kitchen is thoughtfully curated with an emphasis on working with bean-to-bar producers. Bean-to-bar producers make their chocolate from scratch, starting with the raw cacao beans and controlling the entire process, from sourcing to the final bar. We value this approach to chocolate making because it emphasizes quality, transparency, and a direct relationship with cacao farmers. The resulting chocolate bars are often made in small batches and offer unique flavor profiles that can be tied to a single origin of cacao.

Our Chocolate Club is perfect for the chocolate lover looking to expand their palate and discover new favorites.

September 2026 Selection

Belize

This month we’re highlighting a single cacao region: Belize. Belize has a rich ancient and modern chocolate culture rooted in Maya history. Chocolate made from cacao from Belize is known for bright, nutty, and fruity notes.

Dick Taylor Belize 72% Dark Chocolate Bar

Dick Taylor, based in Eureka, California, was one the first bean-to-bar chocolate makers to come on the scene in the early 2010s. They are known for their beautiful packaging and exceptional chocolate. Their 72% Belize dark chocolate bar is made with exceptional cacao from Maya Mountain Cacao in the Toledo district of southern Belize. MMC is a smallholder producer network that has been working with local Mayan farmers to improve not only the quality of the cacao they farm, but also their quality of life. This bar is mild yet complex with floral and dried fruit notes.

Ritual Belize 75% Dark Chocolate Bar

Ritual is an award-winning bean-to-bar chocolate maker based just outside Park City, Utah. They produce small batch chocolate bars using ethically sourced, heirloom cacao. Their single-origin Belize chocolate bar is made with organic cacao that is grown by a network of Mayan farmers in the Toledo district of Belize. This chocolate has an incredible balance of fruity, earthy, and nutty flavors as a result of the complex genetic makeup of the growing region.

Godsend Maya Mountain Belize 75% Dark Chocolate Bar

Godsend is a small bean-to-bar chocolate maker (and paper maker) based in Friendship, ME. Every step of their process is done by hand, including wrapping their bars in the traditional Japanese mulberry paper they also produce in their studio. This bar is made from Q'eqchi' and Mopan Maya-harvested cacao from southern Belize, giving it fruit-forward notes.
