Belgian chocolate maker Callebaut is one of the committed artisan producers that makes chocolate from bean to bar. They roast cacao beans in their shell in order to capture and concentrate the aroma and flavor, leading to greater complexity. All of Callebaut's ingredients are ground extremely fine - finer than most other producers - which translates into an extremely smooth mouth-feel.
This is our preferred chocolate for baking (think chocolate chunk cookies and chocolate cake!) and especially for chocolate fondue. Available in 1-lb blocks.
