Asparagus Frittata with Ricotta and Lemon Recipe

Asparagus is one of the first vegetables to appear in early spring, remaining a seasonal favorite from March through June. Packed with fiber, folate, and vitamins A, C, and K, it is known for its antioxidant properties and natural diuretic benefits. Interestingly, asparagus has been cultivated for over 2,000 years and was highly prized by both ancient Egyptians and Romans.

This month, I am excited to share one of Formaggio Kitchen's staple recipes for a bright and savory Asparagus Frittata with Ricotta and Lemon. This dish pairs tender green asparagus with creamy ricotta and fresh lemon for a light, satisfying meal perfect for breakfast, brunch, or dinner.

Asparagus Frittata with Ricotta and Lemon

Ingredients

1 bunch fresh asparagus, trimmed and cut into 1–2 inch pieces

 6 large eggs

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

Zest of 1 lemon

2 tablespoons olive oil

1 small shallot, finely chopped
Optional: a handful of arugula, spinach, or baby kale 

Salt and black pepper, to taste

Fresh herbs (basil, parsley, or chives)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Blanch the asparagus in boiling salted water for 2–3 minutes until tender, then drain and set aside.
  3. Heat olive oil in an oven-safe, 10-inch skillet over medium heat. Sauté the shallot until softened (2–3 minutes). If adding a handful of greens, add to the skillet and cook until slightly wilted.  
  4. Whisk together the eggs, ricotta, Parmesan, lemon zest, salt, and pepper.
  5. Evenly arrange the asparagus in the skillet and pour the egg mixture over the top.
  6. Cook undisturbed for 3–4 minutes until the edges begin to set.
  7. Transfer the skillet to the oven and bake for 10–12 minutes, or until the center is set.
  8. Let cool slightly, garnish with herbs if desired, and serve warm or at room temperature.

For added richness, you can add a splash of cream to the egg mixture or swap the ricotta for goat cheese for a tangier profile. Leftovers can be refrigerated and enjoyed cold or gently reheated.
