Description
Almanacco is the most structured extra virgin olive oil that Viola offers. It's made exclusively from Frantoio olives harvested from trees that are over one hundred years old, a rarity even in central Italy. While these older groves yield fewer olives, they offer greater concentration and natural complexity. The result is an oil with savory with artichoke noses up front, followed by almond and subtle spice. It has a long, persistent structure with a clean black pepper finish.
We love it as a finishing oil on grilled or roasted meats, hearty fish, legumes, or any dish that can withstand a more structured olive oil.
The Viola family has been cultivating olives and producing oil for generations in the area between Assisi and Spoleto in central Umbria.
