Pasta Enhancements

This month’s selection of tinned fish was curated through a culinary lens: These can all be used to enhance your pasta dinners this month.

Armatore Tinned Grated Bluefin Tuna Bottarga

Bluefin tuna bottarga (salted and cured roe) is a Mediterranean delicacy. Armatore's tinned version comes pre-grated and is made using a traditional process that respects the local area and the guidelines of the International Commission for Atlantic Tuna Conservation. To preserve the roe, it is salted and dried very slowly, ensuring the best flavor and texture. It has a bold savory and briny flavor that enhances a variety of dishes.

The most classic use for bottarga is to make Spaghetti alla Bottarga, a traditional Sardinian pasta dish. In this dish, pasta is tossed with high-quality olive oil, garlic, and a generous amount of grated bottarga. The result is a quick dinner with a complexity that’s normally impossible to achieve so quickly.

Conservas de Cambados Jarred Cuttlefish Ink

This rich, artisanal cuttlefish ink is from producer Conservas de Cambados based in Galicia, Spain, known for their exceptional quality tinned seafood. Cuttlefish ink gives a variety of traditional Mediterranean dishes their distinctive black color as well as a rich, savory, umami flavor.

Add cuttlefish ink to your favorite homemade pasta dough recipe to give it a striking black color. Then use the resulting pasta to make a seafood-based pasta dish like Shrimp Scampi.

Old Habits Roe Herring Fish Sauce

New to our shelves, this artisanal, small-batch fish sauce is produced on Vancouver Island, Canada, by Old Habits Fermentation Co. It is made with only two ingredients: spring-harvested Roe Herring (Clupea Pallasii) and Vancouver Island sea salt. The mixture is then aged for 12 to 24 months to develop a complex flavor full of salty umami notes and a slight sweetness. We describe it as a cross between bottarga and traditional fish sauce.

This fish sauce can be used in a variety of traditional Vietnamese dishes. One of our favorite pasta dishes that use fish sauce is San Francisco-Style Vietnamese American Garlic Noodles. This simple, garlic-heavy, spaghetti dish gets a boost of umami from fish sauce and oyster sauce.

The membership is $75 per month. You can purchase a recurring membership where you will be billed monthly or you can purchase a single month or pre-pay for 3, 6, or 12 months.

Making changes to your subscription is easy. Just log on to your Formaggio Kitchen account and hit “Manage Subscriptions.” There you will find options to change your delivery address, skip a month, cancel your subscription, and/or update your billing information.

We ship out the club packages the second Wednesday of each month. While we can’t accommodate a custom ship date, you can skip a month by logging into your Formaggio Kitchen account.

While we can’t customize what comes in the monthly selection, as a member you can add whatever products you’d like to take advantage of the free shipping that comes with your membership. Yes. If you don’t want all your items to be consolidated into one shipment you’ll need to place a separate order. Please note that in order to take advantage of your free shipping as a member all items must be consolidated into the monthly club shipment.

Tinned fish has a long shelf life unopened. Once opened, we recommend storing it in the fridge and consuming it within a week.

If you’re using our prepaid option you can apply a gift card to your purchase. However, unfortunately, we can’t take gift card payments for our monthly recurring memberships just yet.

Orders must be placed the Sunday before the second full week of the month in order to be added to your monthly shipment.
