When sourcing tinned fish, we look for producers that practice sustainable fishing as well as ones that work in an artisan fashion, whether that be by using traditional methods, operating at a small scale, or both.

Mouettes d'Arvor Mackerel in Muscadet Wine and Spices

Mouettes d'Arvor is a third-generation French cannery based in Concarneau, Brittany. This tin contains tender mackerel fillets slow-cooked in a marinade of Muscadet wine (a dry white wine from the Loire Valley), along with vinegar, salt, and aromatics like lemon, onion, carrot, and pepper.

Minnow Mussels in Escabeche

Minnow, owned by restaurateurs in New York City, focuses on only sustainably-sourced seafood. The mussels in this tin are grown in the clear waters of the Galician Rías, inlets along Spain's Western coast. They are lightly fried and then packed in escabeche, a blend of vinegar, olive oil, bay leaves, and spices.

Tenorio Tuna in Tomato and Basil Sauce

Tenorio is a traditional cannery based in Portugal. The tuna in this tin is sourced from the Atlantic waters around the Azores. The fillets are prepared by hand and preserved in olive oil flavored with sun-dried tomatoes and basil.

Wildfish Cannery Rockfish with Garlic and Sumac

Wildfish Cannery is a producer based in Alaska who is committed to quality and innovation. This limited edition tin is made with delicate Southeast Alaskan rockfish, a mild white fish, combined with the bright, citrusy flavor of sumac, punchy garlic, a high-quality Spanish olive oil. The blend of aromatic garlic and citrusy sumac provides elegant brightness that enhances rather than overwhelms the fish's subtle natural sweetness.

Jose Gourmet Spiced Calamari in Ragout Sauce

Jose Gourmet is an innovative producer from Portugal. This tin contains squid sourced from the Atlantic and Pacific oceans spiced with a blend of pepper, clove, and laurel as well as tomato.

The membership is $75 per month. You can purchase a recurring membership where you will be billed monthly or you can purchase a single month or pre-pay for 3, 6, or 12 months.

Making changes to your subscription is easy. Just log on to your Formaggio Kitchen account and hit “Manage Subscriptions.” There you will find options to change your delivery address, skip a month, cancel your subscription, and/or update your billing information.

We ship out the club packages the second Wednesday of each month. While we can’t accommodate a custom ship date, you can skip a month by logging into your Formaggio Kitchen account.

We ship out the club packages second Wednesday of each month. If you purchase mid-month your first shipment will be shipped the following month.

Your shipment will arrive the second full week of each month.

While we can’t customize what comes in the monthly selection, as a member you can add whatever products you’d like to take advantage of the free shipping that comes with your membership. Purchase additional items through the club portal and we’ll consolidate it all into one box to be shipped the first full week of the month.

Yes. If you don’t want all your items to be consolidated into one shipment you’ll need to place a separate order. Please note that in order to take advantage of your free shipping as a member all items must be consolidated into the monthly club shipment.

Yes, you can skip a month and/or change your shipping address by logging into your Formaggio Kitchen account.

Tinned fish has a long shelf life unopened. Once opened, we recommend storing it in the fridge and consuming it within a week.

If you’re using our prepaid option you can apply a gift card to your purchase. However, unfortunately, we can’t take gift card payments for our monthly recurring memberships just yet.

Orders must be placed the Sunday before the second full week of the month in order to be added to your monthly shipment.
