Our tinned fish buyer at Formaggio Kitchen has curated a selection that has something for every tinned fish lover: from staples like really good tuna packed in olive oil to more rare and obscure finds like cod liver. When sourcing tinned fish, we look for producers that practice sustainable fishing as well as ones that work in an artisan fashion, whether that be by using traditional methods, operating at a small scale, or both.

Sardines
This month we’re highlighting the versatility of the humble sardine, showcasing a variety of tins from around the world.
Ortiz Sardinas A la Antigua Jar
'A la Antigua,’ meaning ‘old style’ in Spanish, references the fact that the sardines are packed in olive oil with their silvery skins still on. The sardines in this jar are caught between August and November, with seine fishing and preferably at dawn, to guarantee the best flavor. Spanish company Ortiz uses sardines of the Sardina pilchardus variety which are prepared by hand and preserved in olive oil.
Fangst Brisling Sardine No. 1
´Brisling,’ known as the ‘Nordic sardine,’ is a small fish that traditionally was landed in great numbers along the Scandinavian and Baltic coastlines. Danish company Fangst smokes the small fish with heather and chamomile and hand-prepares them to be preserved in the tin with cold-pressed rapeseed oil.
Les Mouettes d'Arvor Sardines with Olive Oil and Lemon
Les Mouettes d'Arvor is a French cannery founded and run by the Breton Gonidec family since the 1950's. They are renowned for their traditional methods and high quality tins. These sardines are fished on day boats right off the coast of Brittany and prepared by hand, with just extra virgin olive oil, lemon, and salt, as soon as unloaded.
Matiz Small Sardines with Piquillo Peppers
These ‘sardinillas’ or small sardines are wild-caught in the waters of Spain, Italy, and Croatia. They are then hand-packed at Matiz’s facility in Galicia in northern Spain. Prized for their plump, tender texture and rich flavor, they are prepared in traditional Spanish style with Spanish olive oil and a touch of sweet piquillo pepper.

The membership is $75 per month. You can purchase a recurring membership where you will be billed monthly or you can purchase a single month or pre-pay for 3, 6, or 12 months.
Making changes to your subscription is easy. Just log on to your Formaggio Kitchen account and hit “Manage Subscriptions.” There you will find options to change your delivery address, skip a month, cancel your subscription, and/or update your billing information.
We ship out the club packages the second Wednesday of each month. While we can’t accommodate a custom ship date, you can skip a month by logging into your Formaggio Kitchen account.
We ship out the club packages second Wednesday of each month. If you purchase mid-month your first shipment will be shipped the following month.
Your shipment will arrive the second full week of each month.
While we can’t customize what comes in the monthly selection, as a member you can add whatever products you’d like to take advantage of the free shipping that comes with your membership. Purchase additional items through the club portal and we’ll consolidate it all into one box to be shipped the first full week of the month.
Yes. If you don’t want all your items to be consolidated into one shipment you’ll need to place a separate order. Please note that in order to take advantage of your free shipping as a member all items must be consolidated into the monthly club shipment.

Yes, you can skip a month and/or change your shipping address by logging into your Formaggio Kitchen account.
Tinned fish has a long shelf life unopened. Once opened, we recommend storing it in the fridge and consuming it within a week.
If you’re using our prepaid option you can apply a gift card to your purchase. However, unfortunately, we can’t take gift card payments for our monthly recurring memberships just yet.
Orders must be placed the Sunday before the second full week of the month in order to be added to your monthly shipment.
