When sourcing tinned fish, we look for producers that practice sustainable fishing as well as ones that work in an artisan fashion, whether that be by using traditional methods, operating at a small scale, or both.

Oregon's Choice Smoked Albacore
This smoked delicacy begins with premium-grade Oregon Albacore, brined in a family recipe of brown sugar, sea salt, and spices. Slow-smoked over native Alderwood coals and packed in its natural juices, this tin delivers an unmatched flavor profile that’s both moist and delicately smoked. Certified by the Marine Stewardship Council (MSC), this smoked albacore tuna upholds the highest standards of sustainability. Packaged in non-BPA cans, it guarantees both quality and environmental responsibility.
In 1977, out at sea on his boat, Captain Herb Goblirsch had the idea to start a canned seafood business. Living in a small fishing community along the Oregon coast, the lifelong fisherman saw first hand just how much people cared about where their fish came from. Since then, Oregon’s Choice has been proving that you can have it all: high quality, sustainable seafood that is good for you and better for our oceans, too.
Wildfish Sockeye Smoked Salmon
Sourced from throughout Alaska, sustainably caught, and smoked, this tin contains salmon with a brilliant red flesh, bold salmon flavor, firm texture, and rich smokehouse flavor. Enjoy on a platter or eat like the locals do: very simply, on a bed of steamed rice and a shake or two of Kelp Furikake.
Based in Klawock, Alaska, Wildfish is a family-run operation. The company was started in 1987 by Phyllis Meuller as a smokehouse to feed the community. Wildfish works with local fishermen directly on the docks to source only Alaskan, wild-caught seafood and packs it in their own cannery.
Island Creek Littleneck Clams in Confit Garlic, Chili, and Olive Oil
This not only the very first tin to roll out of Island Creeks new New Bedford cannery, but one that is entirely produced in the USA using 100% traceable product, and that is canned in the European craft style, all by hand. A rarity in the seafood industry as a whole, and certainly in the USA.
The clams sourced for this tin were farmed by aquaculture legends at Cherrystone Aqua-Farms in Virginia. They are then preserved in a flavorful mix of confit garlic, chili, and olive oil. The clams are supremely tender and flavorful with a perfect balance of salt and heat from the chili de árbol. Island Creek recommends saving the confit garlic clove for last, eating it when you reach the end of the tin like the worm in a tequila bottle.
Based in Duxbury, Massachusetts, Island Creek began as a small oyster farm and has since grown to supply some of the best restaurants in the country with Duxbury oysters, own a few restaurants of their own, and now, run a cannery to support their line of tinned seafood.

The membership is $75 per month. You can purchase a recurring membership where you will be billed monthly or you can purchase a single month or pre-pay for 3, 6, or 12 months.
Making changes to your subscription is easy. Just log on to your Formaggio Kitchen account and hit “Manage Subscriptions.” There you will find options to change your delivery address, skip a month, cancel your subscription, and/or update your billing information.
We ship out the club packages the second Wednesday of each month. While we can’t accommodate a custom ship date, you can skip a month by logging into your Formaggio Kitchen account.

Your shipment will arrive the second full week of each month.
While we can’t customize what comes in the monthly selection, as a member you can add whatever products you’d like to take advantage of the free shipping that comes with your membership. Purchase additional items through the club portal and we’ll consolidate it all into one box to be shipped the first full week of the month.
Yes. If you don’t want all your items to be consolidated into one shipment you’ll need to place a separate order. Please note that in order to take advantage of your free shipping as a member all items must be consolidated into the monthly club shipment.

Tinned fish has a long shelf life unopened. Once opened, we recommend storing it in the fridge and consuming it within a week.
If you’re using our prepaid option you can apply a gift card to your purchase. However, unfortunately, we can’t take gift card payments for our monthly recurring memberships just yet.
Orders must be placed the Sunday before the second full week of the month in order to be added to your monthly shipment.
