Twin brother, farmer, and chef Nic of Quintosapore created this unique aioli recipe using their ‘Aglione del Re’ garlic, grapeseed oil, potatoes, and lemon.
Although it is called “big garlic”, Aglione belongs to the family of leeks and dates back to the Etruscan times, when it was called “Emperors’ Garlic." This protected variety grows only in the Valdichiana area, where Quintosapore is amongst the few producing it under strict organic practices.
One of the best ways to enjoy this condiment is with roasted potatoes.
INGREDIENTS: Aglione garlic (39%), sunflower oil, extra virgin olive oil, potato, lemon juice, pasteurized egg yolk, salt, white pepper.
