Since 1624, the Álvarez de Toledo family has been operating their Perales de Valdueza estate in Extremadura, Spain–a site that has a 2,000-year-old legacy of producing olive oil, and 400 years of wine-making history.
The name Merula comes from the Latin word for yellow-beaked black bird, a bird that populates the Alvarez de Toledo family estate.
The region of Extremadura is renowned for its rare Morisca olive, Merula Olive Oil is made with this rare Morisca olive, as well as the aromatic Arbequina. These olives have a lower fruit yield, but the fruit has immense flavor characteristics. Estate grown and pressed, this oil is made from the first early harvest. These olives are specifically harvested and carefully blended to create the unique Merula personality.
