This jar contains 70g of flavor-packed whole cloves of black garlic. Black garlic has a sweet, caramelized flavor and a melt-in-your-mouth texture. It can be used in a variety of recipes or simply eaten on its own. Add it to sauces, marinades, purées, or in fine slices in your pasta… It pairs well with all types of meat, cold meats, foie gras, fish, and crustaceans.
L’Etuverie (“The Steamer”) is the story of two longstanding friends: Nicolas and Fabien. For many years, they wanted to showcase local products from their home region of Lomagne, France, which are too often transformed far from where they’re produced. The light bulb went off during a trip to Asia, where they discovered black garlic and its many qualities. They decided to apply this ancestral tradition to garlic grown in southwestern France. L’Etuverie was established on the family farm where Nicolas grew up, and continues to be an organic farm that they still operate today.
Black garlic is obtained by steaming white garlic in a closed-off environment in which the temperature and humidity are carefully controlled and adjusted throughout the process. Several natural chemical reactions result in changes in the product’s appearance, taste, and texture. The white garlic spends approximately 2 weeks at a temperature between 140°F and 176°F with a humidity level ranging from 70% to 95%. The result is cloves that are tender and soft with a characteristic ebony color and sweet, intensely caramelized flavor.
