Our tinned fish buyer at Formaggio Kitchen has curated a selection that has something for every tinned fish lover: from staples like really good tuna packed in olive oil to more rare and obscure finds like cod liver. When sourcing tinned fish, we look for producers that practice sustainable fishing as well as ones that work in an artisan fashion, whether that be by using traditional methods, operating at a small scale, or both.

This month we’re showcasing tuna fish in all its glory through diverse preparations from around the world.

Oregon's Choice Albacore with Jalapeno and Garlic

Oregon’s Choice pairs Oregon albacore with a kick of diced jalapenos and minced garlic to create a tin that’s packed with flavor but not too spicy (maybe a 4/10). Their tuna is sustainably sourced and certified by the Marine Stewardship Council (MSC). Packaged in its own natural juices (no water, oil, or preservatives) in non-BPA cans, it reflects the company’s commitment to both flavor and environmental stewardship.

Oregon’s Choice is a 43+ year old, 2nd generation-run, family business based on Oregon’s coast. Their mission proves that you can have it all: high-quality, sustainable seafood that is good for you and better for our oceans, too.

Tenorio Tuna in Olive Oil with Dried Tomato and Basil

Tenorio makes some of our favorite high-quality tinned tuna in olive oil. This particular tin is flavored with the addition of dried tomatoes and basil for an added savory umami flavor and vibrant herbal note.

Tenorio was established in 1880 by Francisco Rodrigues Tenório in Vila Real de Santo Antonio, in the Algarve region of Portugal. Tenorio specializes in tuna, and each tin is full of fish that has been hand-cleaned, preserved, and packed. Tenorio is now based out of the Azores, an archipelago off the coast of Portugal that happens to be right in the migratory path of the tuna that Tenorio offers.

Santa Catarina Tuna Fillet in Organic Olive Oil

Santa Catarina's skipjack tuna fillets are sustainably fished by "Pole & Line,” from São Jorge, Açores, Portugal and hand-packed with a little salt in organic olive oil. "Pole & Line" fishing is an artisanal method that is sustainable and requires the skill of the fishermen. They use binoculars to locate the presence of tuna and then turn off their engines and use showers to mimic the escape of small fish that the tuna feeds on. This hides the fishermen from the tuna's view. After, they cast bait to attract the school and begin fishing. This method of fishing is selective, avoiding harm to other species and smaller fish, and is considered eco-friendly because the fisherman can choose the fish to be caught. Unlike commercial trawling, "Pole & Line" fishing allows for responsible and sustainable fishing practices.

Santa Catarina is based in the Azores, Portugal and produces high-quality, simple, tins of fish.

Arroyabe Bonito del Norte in Olive Oil

Bonito del Norte is considered by the Spaniards to be the finest of tunas. Each tuna Arroyabe works with is line-caught by hand, preserving the texture and flavor that can be damaged by the stress of harvesting by net. This oil-packed, high-quality tuna is a far cry from the water-packed stuff you get at the supermarket, you’ll never go back!

Arroyabe is a venerable company from the Basque region, famed for its firm, flavorful tuna.

The membership is $75 per month. You can purchase a recurring membership where you will be billed monthly or you can purchase a single month or pre-pay for 3, 6, or 12 months.

Making changes to your subscription is easy. Just log on to your Formaggio Kitchen account and hit “Manage Subscriptions.” There you will find options to change your delivery address, skip a month, cancel your subscription, and/or update your billing information.

We ship out the club packages the second Wednesday of each month. While we can’t accommodate a custom ship date, you can skip a month by logging into your Formaggio Kitchen account.

We ship out the club packages second Wednesday of each month. If you purchase mid-month your first shipment will be shipped the following month.

Your shipment will arrive the second full week of each month.

While we can’t customize what comes in the monthly selection, as a member you can add whatever products you’d like to take advantage of the free shipping that comes with your membership. Purchase additional items through the club portal and we’ll consolidate it all into one box to be shipped the first full week of the month.

Yes. If you don’t want all your items to be consolidated into one shipment you’ll need to place a separate order. Please note that in order to take advantage of your free shipping as a member all items must be consolidated into the monthly club shipment.

Tinned fish has a long shelf life unopened. Once opened, we recommend storing it in the fridge and consuming it within a week.

If you’re using our prepaid option you can apply a gift card to your purchase. However, unfortunately, we can’t take gift card payments for our monthly recurring memberships just yet.

Orders must be placed the Sunday before the second full week of the month in order to be added to your monthly shipment.
