Passata is a tomato puree that is "passed" through a coarse strainer to yield a smooth tomato base that can be used on its own or as the foundation of your favorite tomato sauce. This passata is made using golden yellow tomatoes grown in the sunny fields of Puglia (the heel of Italy's boot).
