Our chocolate selection at Formaggio Kitchen is thoughtfully curated with an emphasis on working with bean-to-bar producers. Bean-to-bar producers make their chocolate from scratch, starting with the raw cacao beans and controlling the entire process, from sourcing to the final bar. We value this approach to chocolate making because it emphasizes quality, transparency, and a direct relationship with cacao farmers. The resulting chocolate bars are often made in small batches and offer unique flavor profiles that can be tied to a single origin of cacao.

This month we’re highlighting bars from producers who are sourcing beans from the same area where the chocolate is being made.

Marou Lam Dong 74% Dark Chocolate Bar

This rare and delicate chocolate is made in micro-batches from cocoa beans cultivated in hilly woodland at the edge of the Vietnamese Central Highlands between Madagui and Bao Loc, Lam Dong. The higher altitude, cooler climate produces cacao with complex, aromatic flavors.

Marou Faiseurs de Chocolat, based in Vietnam, was founded by two Frenchmen, Samuel and Vincent. They rely on a tight network of small farmers in Vietnam from whom they buy the best beans, one bag at a time, for a premium price. Marou stands as one of the pioneering bean-to-bar producers in Asia and one of the few worldwide crafting chocolate at its source.

Kakoa Tuzantan Coffee 62% Dark Oat Milk Chocolate Bar

This special edition chocolate bar is made with 62% cacao from Tuzantán in Chiapas, Mexico combined with locally sourced coffee and oat milk. The resulting bar has a balanced flavor that's creamy with slightly bitter and roasty notes from the coffee.

Kakoa is a Mexican bean-to-bar chocolate producer founded in 2019. Their mission is to bring the unique and authentic experience of Mexican cacao to people around the world. Their cacao is directly sourced from farmer communities in Chiapas in Southeast Mexico. They pay 3-4x the Fair-Trade price of cacao directly to the farmers they work with. Their chocolate bars are made to highlight the flavors naturally found in the cacao and thus aren't made with any unnatural additives or preservatives.

Lonohana Hawaiian 70% Dark Chocolate Bar

The cacao for this dark chocolate bar is grown in the nutrient-rich soils on the North Shore of the Hawaiian Islands, Oahu, Waialua, Kamananui. It is harvested at the peak of ripeness, capturing bright citrus notes in delicious bold chocolate.

Lonohana was created to answer the founders’ question: “Could we create a transparent, vertically integrated chocolate company here in Hawaii?” Their ambitious vision was to grow their own cacao, transform that locally-grown fruit into high quality chocolate, and restore health to their aina through regenerative agriculture, all while helping to establish Hawaii as a leading origin for world-class chocolate. Since establishing their farm in 2009, they have achieved all of the above, and to us, proving that the answer to their question is a resounding ‘yes.’

The membership is $75 per month. You can purchase a recurring membership where you will be billed monthly or pre-pay for 3, 6, or 12 months.

Making changes to your subscription is easy. Just log on to your Formaggio Kitchen account and hit “Manage Subscriptions.” There you will find options to change your delivery address, skip a month, cancel your subscription, and/or update your billing information.

We ship out the monthly club packages the 2nd Wednesday of each month. While we can’t accommodate a custom ship date, you can skip a month by logging into your Formaggio Kitchen account.

Our monthly club packages ship the 2nd Wednesday of each month. If you purchase mid-month your first shipment will be shipped the following month.

Your shipment will arrive the 2nd full week of each month.

While we can’t customize what comes in the monthly selection, as a member you can add whatever products you’d like to take advantage of the free shipping that comes with your membership. Purchase additional items through the club portal and we’ll consolidate it all into one box to be shipped the first full week of the month.

Yes. If you don’t want all your items to be consolidated into one shipment you’ll need to place a separate order. Please note that in order to take advantage of your free shipping as a member all items must be consolidated into the monthly club shipment.

Yes, you can skip a month and/or change your shipping address by logging into your Formaggio Kitchen account.

Chocolate has a long shelf life. However, to experience optimal freshness and peak quality, we recommend consuming it within 6 months of opening.

If you’re using our prepaid option you can apply a gift card to your purchase. However, unfortunately, we can’t take gift card payments for our monthly recurring memberships just yet.

Orders must be placed the Sunday before the second full week of the month in order to be added to your monthly shipment.

Yes! You can gift a recurring subscription or pre-pay for 3, 6, or 12 months.
