Formaggio Kitchen Chocolate Club
Expand Your Palate (and Sweet Tooth) Each Month!
Our chocolate selection at Formaggio Kitchen is thoughtfully curated with an emphasis on working with bean-to-bar producers. Bean-to-bar producers make their chocolate from scratch, starting with the raw cacao beans and controlling the entire process, from sourcing to the final bar. We value this approach to chocolate making because it emphasizes quality, transparency, and a direct relationship with cacao farmers. The resulting chocolate bars are often made in small batches and offer unique flavor profiles that can be tied to a single origin of cacao.
Our Chocolate Club is perfect for the chocolate lover looking to expand their palate and discover new favorites.

February 2026 Selection
Chocolate with Texture
This month we’re highlighting chocolate that has an intentionally rustic, grainy texture due to a traditional grinding process, adding complexity to the experience on the palate.
Taza Vanilla Chocolate Disk
Taza founder and CEO Alex Whitmore took his first bite of stone ground chocolate while traveling in Oaxaca, Mexico. He was so inspired by the rustic intensity that he decided to create a chocolate factory back home in Somerville, MA. Taza uses hand-carved granite mill stones to make chocolate that is less-processed, giving it a delightfully gritty texture that allows their Direct Trade cacao to shine.
This 50% cacao dark chocolate disk has fragrant vanilla ground into it, giving it a warm, rich flavor. Further intensified by the grainy texture on the palate.
Donna Elvira Cafe Timor Bar
Donna Elvira’s chocolate bars follow the regulations for traditional PGI Modican chocolate production. The raw cocoa is processed cold, without conching, allowing the full expression of the bean’s origin, and resulting in a grainy, crumbly texture with undissolved sugar crystals. Modica Chocolate has its roots in the ancient Xocoàtl Atzeca. The Spaniards brought the use of cocoa to Sicily, where over the centuries it has been protected from industrialization. It is the first chocolate in Europe to be granted PGI status by the EU.
This bar is made with 100% Arabica Timor Coffee from the Giamaica Caffè Roasting Laboratory, giving it a slight bitterness and fragrant aroma that we think plays well with the grainy texture on the palate.
Bonilla a la Vista Chocolate Bar for Drinking Chocolate
Bonilla a la Vista is a family-run company based in Spain. To most of our customers, they are recognized for their olive oil-fried potato chips packaged in an iconic white and blue tin. However, in Galicia, Spain, they run churreries where they sell churros, of course, as well as they famous potato chips and hot drinking chocolate.
This bar can be shaved into pieces and enjoyed raw, or melted down with a little water or milk to be enjoyed as a super rich and thick hot beverage. This chocolate is made with a small amount of rice flour which gives it its mouth-coating texture.
