Charcuterie is the culinary art of preserving meat. With origins in France, the practice encompasses a variety of preservation techniques like curing, salting, smoking, drying, or cooking. While the most popular products are pork-based, charcuterie can be made from any type of meat, including but not limited to: duck, rabbit, veal, lamb, beef, and more. At Formaggio Kitchen we have a fully staffed charcuterie program where we make pâté and other preparations in-house. We also work with artisans both in the United States and abroad to source delicacies like Jamón ibérico from Spain or 'Nduja from Italy.

Italy
This month we’re highlighting a selection of cured meats that showcases the rich meat preservation techniques found in Italy.
Pio Tosini 20 Month Legato Prosciutto
This sweet, cured Italian ham bears the honorable mark of the Consorzio del Prosciutto di Parma, signifying its exceptional quality and adherence to the rigorous curing processes. Made by the 4th-generation family-owned and operated company Pio Tosini, it is aged for over 660 days (more than 260 days longer than typical prosciutto production). This allows for slow and even salt penetration, resulting in a distinctive sweetness. Each ham is personally selected by the company and is trimmed and deboned by hand. There are only four ingredients that go into this ham, and they are Italian pigs, salt, air, and time. 'Legato' refers to the ham's round shape: it's rolled rather than pressed.
This is our most popular age of Prosciutto di Parma. It has a distinct sweetness and supple texture.
Devodier 36 Month Prosciutto di Parma
The Devodier family has worked in the meat sector of Parma, Italy since the 1700s. In the 1950s, Enrico Devodier decided to follow his dream: he moved from the city of Parma to its surrounding hilly area, where he built the ancient cellars that still act as the core of the family's factory today. On April 18th, 1963, Enrico, together with his fellow ham producers of the Parma hills, founded the Consorzio del Prosciutto di Parma. This was a pivotal moment in Prosciutto di Parma's history, establishing minimum processing rules in order to guarantee quality standards, origin, and a territorial identity of the product.
Devodier's 36 month aged Prosciutto di Parma is the oldest prosciutto we carry. This cured Italian ham bears the honorable mark of the Consorzio del Prosciutto di Parma, signifying its exceptional quality and adherence to the rigorous curing processes. There are only four ingredients that go into this ham, and they are Italian pigs, salt, air, and time. The result is a bold and complex pork product layered with salty and sweet flavors with a silky texture.
We included two ages of prosciutto this month for you to experience side-by-side how 20 months vs 36 months affects the flavor and texture of the final product.
Speck Alto Adige
Speck Alto Adige is a lightly smoked, cured ham from Italy's South Tyrol region with PGI (Protected Geographical Indication) status. It is made from a pressed leg of ham rubbed with a mixture of salt, pepper, juniper, bay leaf and other spices. The hams are cured for several weeks, smoked with beech wood, and matured in well-ventilated rooms with cool South Tyrol mountain air flowing through them, for at least 22 weeks. The result is a cured meat that’s savory and smoky, and leaner than prosciutto.
Mortadella with Pistachios
Mortadella is a large pork salume with a supple, silky texture, speckled with fat, peppercorns, and pistachios (though not always). The best-known version is mortadella Bologna PGI. It originated in the Italian city of Bologna in the 14th century. It is made by grinding pork meat into a paste, mixing it with salt and spices, and then stuffing the mixture into a casing, and cooking it slowly over low heat.

The membership is $85 per month. You can purchase a recurring membership where you will be billed monthly or pre-pay for 3, 6, or 12 months.
Making changes to your subscription is easy. Just log on to your Formaggio Kitchen account and hit “Manage Subscriptions.” There you will find options to change your delivery address, skip a month, cancel your subscription, and/or update your billing information.
We ship out the monthly club packages the 2nd Wednesday of each month. While we can’t accommodate a custom ship date, you can skip a month by logging into your Formaggio Kitchen account.
Our monthly club packages ship the 2nd Wednesday of each month. If you purchase mid-month your first shipment will be shipped the following month.
Your shipment will arrive the 2nd full week of each month.
While we can’t customize what comes in the monthly selection, as a member you can add whatever products you’d like to take advantage of the free shipping that comes with your membership. Purchase additional items through the club portal and we’ll consolidate it all into one box to be shipped the first full week of the month.
Yes. If you don’t want all your items to be consolidated into one shipment you’ll need to place a separate order. Please note that in order to take advantage of your free shipping as a member all items must be consolidated into the monthly club shipment.

Yes, you can skip a shipment and/or change your shipping address by logging into your Formaggio Kitchen account.
For charcuterie, we recommend storing it in the fridge upon arrival and consuming it within a week.
If you’re using our prepaid option you can apply a gift card to your purchase. However, unfortunately, we can’t take gift card payments for our monthly recurring memberships just yet.
Orders must be placed the Sunday before the 2nd full week of the month in order to be added to your monthly shipment.
