Charcuterie is the culinary art of preserving meat. With origins in France, the practice encompasses a variety of preservation techniques like curing, salting, smoking, drying, or cooking. While the most popular products are pork-based, charcuterie can be made from any type of meat, including but not limited to: duck, rabbit, veal, lamb, beef, and more. At Formaggio Kitchen we have a fully staffed charcuterie program where we make pâté and other preparations in-house. We also work with artisans both in the United States and abroad to source delicacies like Jamón ibérico from Spain or 'Nduja from Italy.
Our Charcuterie Club is perfect for the meat lover who wants to experience the endless possibilities that the art form of charcuterie has to offer.

February 2026 Selection
Pasta Enhancements
This month’s selection of cured meat was curated through a culinary lens: These can all be used to enhance your pasta dinners this month.
‘Nduja Bella (Jarred ‘Nduja)
'Nduja is a soft, spreadable fermented pork salume from Southern Italy, spiked with fiery Calabrian chilies. This month we’ve included a shelf-stable ‘nduja from ‘Nduja Bella. It's very challenging to import meat products into the U.S., so, defying import laws, this Calabrian company made the leap to open a facility in the U.S. so that they could sell traditional 'nduja without having to import it.
‘Nduja is delicious on its own spread on a crostini, or used as an ingredient to add a savory and spicy boost to a variety of dishes. Stir it into a simple tomato or vodka sauce to take your pasta night to the next level.
Biellese Guanciale
Guanciale is an Italian cured meat made from pork jowl. Its high fat content gives it a deliciously rich flavor and texture. We get ours from New York-based charcuterie company Salamuria Biellese. Theirs is made with Berkshire pork jowl seasoned with a classic mix of Italian herbs and spices.
Guanciale is an essential ingredient for making authentic versions of three traditional Roman pasta dishes: Carbonara, Amatriciana, and Gricia. Some cooking advice: When crisping up guanciale, you don’t need to add any fat to the pan since it already contains plenty. Just go low and slow, trying to render out the fat at too high of a temperature will result in burning the guanciale.
Goikoa Chorizo BBQ
Goikoa, based in Sangüesa, Spain, is a family-owned company making exceptional chorizo from humanely-raised pork seasoned with smoky Spanish paprika and other aromatics. This version of Spanish chorizo is cured for slightly less time than the kind you slice up for a charcuterie board (though it still can be enjoyed uncooked), giving it a softer, more tender texture.
Perfect for a variety of cooking techniques, this chorizo can be grilled, sautéed, fried, or poached in wine. Try it sautéed in olive oil with garlic and chickpeas and added to your favorite short pasta for an easy and flavorful dinner.

The membership is $85 per month. You can purchase a recurring membership where you will be billed monthly or pre-pay for 3, 6, or 12 months.
Making changes to your subscription is easy. Just log on to your Formaggio Kitchen account and hit “Manage Subscriptions.” There you will find options to change your delivery address, skip a month, cancel your subscription, and/or update your billing information.
We ship out the monthly club packages the 2nd Wednesday of each month. While we can’t accommodate a custom ship date, you can skip a month by logging into your Formaggio Kitchen account.
Our monthly club packages ship the 2nd Wednesday of each month. If you purchase mid-month your first shipment will be shipped the following month.
Your shipment will arrive the 2nd full week of each month.
While we can’t customize what comes in the monthly selection, as a member you can add whatever products you’d like to take advantage of the free shipping that comes with your membership. Purchase additional items through the club portal and we’ll consolidate it all into one box to be shipped the first full week of the month.
Yes. If you don’t want all your items to be consolidated into one shipment you’ll need to place a separate order. Please note that in order to take advantage of your free shipping as a member all items must be consolidated into the monthly club shipment.

Yes, you can skip a shipment and/or change your shipping address by logging into your Formaggio Kitchen account.
For charcuterie, we recommend storing it in the fridge upon arrival and consuming it within a week.
If you’re using our prepaid option you can apply a gift card to your purchase. However, unfortunately, we can’t take gift card payments for our monthly recurring memberships just yet.
Orders must be placed the Sunday before the 2nd full week of the month in order to be added to your monthly shipment.
