These are organic small-batch handmade preserves made by Sylvie and Pascal Raunicher at La Ferme de Mazairas in the small town of St. Sylvestre in the region of Ardèche. Their tiny farm specializes in organic fruit, using unusual varieties with tons of fresh flavor. Their jams have less sugar and less pectin than other jams and as a result their texture is more suited to being scooped with a spoon than spread with a knife.

Handpicked organic black cherries are lovingly cooked, on a low heat until this rich preserve has a striking dark purple color and flavor that has a warm sweetness and a mellow tartness.

    This cherry confiture is amazing.

I don’t even like jam, and I had to stop myself from eating spoonful after spoonful. Huge cherries full of complex flavors float in a delicious non-sticky syrup. The balance of sweet and tart is perfect. This would make a very welcome host/ess gift.
