We discovered this wonderful producer of Balsamico at Salon del Gusto in Turin Italy. In addition to their Aceto Balsamico Tradizionale di Reggio Emilia, they produce a number of other amazing balsamic products including this Condimento Balsamico.
Essentially a young balsamic vinegar, Agro di Mosto is made of cooked grape must, the same process that makes Aceto Balsamico, but extracted young, after only 2-3 years. The result is a vinegar that is quite tart but still delicate, full of fresh aromas. Perfect for vinaigrettes and salad dressings.
