Pacific White sturgeon (Acipenser transmontanus) is a species that inhabits the Pacific Coast from Alaska to Baja California. White sturgeon like to live in soft bottoms of estuaries, where the salinity of the water is higher. White sturgeon are known to live long lives – up to one hundred years – and are fattier than other sturgeon, with high protein content meat and exquisite eggs. Known for having four to eight bony plates in two rows on its back, the White Sturgeon migrates up complex river systems to breed. Pacific White sturgeon have been successfully bred by Calvisius in Italy since 1981.
