Description
Bottarga is a special delicacy of cured and salted fish roe. The roes is from the Grey Mullet fish (bottarga di muggine). It is prepared by salting, pressing, and aging the roe sac, resulting in a dense, semi-firm product that can be sliced or grated. Bottarga adds a deeply savory and briny flavor to a variety of dishes: simple pastas, roasted vegetables, or even scrambled eggs.
