Casa dei Tajarin

Mauro Musso runs his small pastificio in the city of Alba in Italy's Piedmont region. He works closely with Mulino Marino to buy the highest quality flours he can find. All of his flours are certified organic (EU) and his recipes are simple enough to highlight their delicate flavors.

We were introduced to his pasta on one of our visits to Famiglia Marino and we were blown away by in particular by his rye flour Tajarin.
