Balsamic Vinegar

Made from the must of Trebbiano grapes, true balsamic is aged in a succession of progressively smaller sized barrels made of oak, mulberry, juniper, chestnut and cherry. These barrels are kept in attics where the windows are left opened, exposing the barrels to the cold of winter and heat of summer. Over the years the vinegar mellows, creating the perfect balance of sweet and tart. Typically the finest aged balsamic vinegars earn the coveted designation 'Aceto Balsamico Tradizionale' in the regions of Modena (squat bulbous bottle) and Reggio-Emilia (inverted tulip bottle). Even so, there are many producers who, while producing their balsamic in accordance with (or even in exceess of) the strict tradizionale guidelines do not bother with the certification process and prefer to sell their product on reputation alone.
