The Belgian cheeses we bring in remind us that the world of cheese is so dynamic and varied that surprises are always around the corner. Until we discovered these producers, the Belgian cheeses we knew were rather large production monastery cheeses with similar taste and texture profiles. Our Belgian selection exemplifies the unique talents of both farmhouse and cooperative producers with cheeses as diverse as fresh chèvres, washed rinds, a Gouda-style sheep's milk cheese and a massive marbled blue.
