We discovered this wonderful producer of Balsamico at Salon del Gusto in Turin Italy. In addition to their Aceto Balsamico Tradizionale di Reggio Emilia, they produce a number of other amazing balsamic products including this Red Wine Vinegar.
After traditional acetification, the red wine vinegar thus obtained is left to age in 30-liter juniper barrels. This rare wood gives spicy, resin notes and an unusual incense aroma.
