Made by James Montgomery & Steve Bridges at Manor Farm, North Cadbury, Somerset. Made using raw cow's milk and traditional animal rennet. This is one of the traditionally made cloth-bound farmhouse cheddars that we offer. Monty's has rich, long-lasting flavors that are both fruity and earthy with a pronounced citrusy tang. It has a drier texture than Keen's and can develop crystals when the cheese is aged over 14 months.
