We love this pepper (along with Urfa pepper). It is bright and deep red with a balanced heat. The secret spice in our lamb meatballs. On most tables in Istanbul you will see small bowls of both Maraş and Urfa peppers.
Use just as you would ground black pepper, but with far more interesting results.
