Maricha Black Sarawak Peppercorns - 90g

Country of Origin: Malaysia
Region: Sarawak
City / Village: Sarikei

Black peppercorns as we know them are the dried unripe berries of the Piper nigrum vine, a tropical perennial climber that can reach over 30 feet in height. The wonderful magic of black pepper is that when the green, unripe peppercorns are put out in the sun to dry, an enzyme contained within the pericarp (outer skin) of the peppercorns turns them black and creates the volatile oil piperine. It is this volatile oil that gives black pepper its characteristic aroma and flavor.

Malaysian Sarawak peppercorns are highly prized in the world of specialty spices for their high content of piperine. Using just a small amount of these peppercorns will give a beautifully aromatic heat to any dish.

These particular peppercorns (var. Kuching) are hand-harvested from the Sarikei garden by one man (Mr. Siew) and are processed within 24 hours of harvest (an unheard-of feat in pepper production). The fresh berries are kept intact and are washed several times with clean, cold water and then are dried in a rustic oven at 175F - 200F for fourteen hours.

The pepper is aged for between four and ten years before release to ensure a fully cured and spectacularly flavorful pepper.
