Moses Sleeper is the newest addition to the Jasper Hill cheese family. It's a Camembert-style cheese - chalky when young and creamy when longer-aged. It has a long finish reminiscent of grass, hay, and brassica vegetables (cauliflower, asparagus). Moses's Sleeper has fast become one of our staff's favorite cheeses, and there is little debate that it has become one of the best American bloomy-rind cheeses. Pairs well with a citrus jam or a drizzle of sweet honey.
