Dario Pozzolo has become a leader in the world community of honey producers by working with Slow Food to encourage artisan apiarists to follow sustainable agricultural practices. Dario is based in the town of Bra, Italy, and transports his hives all over the surrounding territory of the Roero following the blooms that he wants for his varietal honeys.
This is a rare and unique honey in that it is not a blossom honey. Instead of collecting pollen, the bees collect the sap of pine trees. This honey is rich in minerals, potassium, phosphorous and iron. It's thick consistency deep flavors are closer to balsam and molasses than to traditional floral honeys. Pair this unique honey with a funkier cheese like Taleggio di Grotta or a ripe Robiola.
