Michael Lee has a herd of 30 milking goats on his modest farm in
Cornwall, VT, and he makes some of our favorite goat's milk cheeses
anywhere - and not just in the United States. After working for our store in Boston
for several years, Michael and his wife Emily found the right land in
Vermont to take their passion for selling cheese and translate it into
cheesemaking.
Now, several years later, Michael wakes up
before dawn every morning, milks his goats, and begins that day's batch
of cheese. Later on, Michael leads his goats around the farm; or,
rather, the goats lead him. They're looking for tasty bites of pine,
juniper, rosemary, or other tasty nibbles. These are happy goats, to be
sure - and happy goats give good milk.
Northstone (also known as Square Cheese) is a square-shaped cheese with a mottled natural rind. Underneath the rind, the paste has a flavor profile of herbs, grass, and toasted nuts, with a pleasing bit of goat milk pungency. The texture varies from batch to batch and season to season; occasionally, it is creamy and almost oozy, and other times it is firm and chewy. Try it with a sweet herbal honey like Lo Brusc Montagne de Lure.
