A 1/2 lb package of our superlative bacon, cured and smoked right here at the store using locally raised all-natural pork bellies.
Our charcutier Julie uses naturally raised pork bellies from a local farm and
cures them for one week with a mixture of maple syrup, salt, pepper,
allspice and bay leaf. The bellies are then cold smoked using apple
wood for four hours. The result is a lightly smoked bacon with plenty
of pure pork flavor.
