For more than four generations, the most important thing for the Mitjans family has been the care of their vineyards with the aim of achieving the best quality for their wines and cavas.

The Can Mayol estate is located in the Penedès region of Catalunya, in the North Eastern area of Spain. The Loxarel family is especially known for their traditional cavas, but they also work with less traditional grapes such as Chardonnay and Cabernet Savignon and Pinot Noir.

This red wine vinegar is made with a base of Cabernet Sauvignon wine that is fermented in American oak barriques and is aged for more than twenty years. This base is then mixed with the naturally sweeter must of the same grape to achieve a richness that is somewhere between a lean red wine vinegar and a young balsamic.

As this is one of the best buys we've found, we use this vinegar in just about anything we can - salads, reductions or as a complement to foie gras.
