To find this cheese one has to go to Corsica, an island that lies 170 kilometres from the French Cote d’Azur. It has a natural rind that is covered with rosemary, thyme, juniper berries, and aromatic herbs that are found in the rocky, brambly underbrush landscape found on the island.
The flavors of the cheese itself are on the milder side (unless very ripe) and the sheep's milk flavor blends perfectly with the herbs on the exterior.
This cheese is very similar to the Brin d'Amour and the cheese called Fleur du Maquis - also from Corsica.
