Ireland's original artisanal blue cheese is named after Cashel Rock, which overlooks the pastures where the cow's graze. Made by the husband and wife team of Louis and Jane Grubb at Beechmount, County Tipperary, Ireland. 

This cheese is made using pasteurized cow's milk and vegetable rennet.  It is a semi-soft and creamy blue cheese with mild spiciness and a distinctive combination of farmy flavors and minerality.

It pairs nicely with a drizzle of herbal honey or serve after dinner with a off dry dessert wine.
