Meats, Charcuterie and Pates

Our charcuterie is all made in our kitchen by resident Charcutier Julie Biggs. As with all of our kitchen products her ingredients highlight the local meats all of which are raised in a natural and humane manner. Our charcuterie selection varies with the seasons - you'll see more fresh sausages perfect for grilling during the summertime and more of an emphasis on richer pates and sausages (boudin blanc) as the weather turns cooler.

We have our bacon, pancetta and beef tongue year-round and for the holidays, Julie pulls out all the stops with her selection of foie gras recipes.
