Flours

From the small town of Cassano-Belbo in the Langhe region of Piedmont. This is a wonderful family-run business that has been working for more than 50 years practicing the ancient art of milling using millstones that have been turning since the first millennium AD.

Mulino Marino grinds a variety of grains at slow speeds (80 rpm vs the more industrial 350rpm) so that the germ and the essential oils of the grain are preserved. All of their grains are organically grown and processed according to the E.U. regulations. The quality of their corn meal is immediately recognizable by the deep corn fragrance.

Their mill produces a number of flours, a variety of which we bring in from time to time: Wheat flours (5 different grinds), Corn Flours (4 different grinds), Spelt, Kamut, Rye, Chickpea, Durum Wheat, Rice, Chestnut and Barley.
