This raclette is from a small dairy in southern Switzerland in the town of Verbier. It is made using the raw milk from the Brown Swiss breed of cow that graze on high mountain pasture during the warmer months and eat only dried grasses from the same pastures during the colder months. This dairy produces both the traditional round raclette and a small little tomme reminiscent of the French Reblochon.

This is a hearty, aromatic melting cheese that is delicious when served with thin sliced bunderfleish, new boiled potatoes and cornichons.
