The name of this cheese comes from the 'morchia' which is the dense layer of deposits left at the bottom of the traditional terracotta urns that olive oil is stored in. This morchia is mixed with ash and used as a coating on the exterior of the cheese, which helps preserve moisture while still allowing it to breathe so that the cheese, in turn, can be aged beyond the typical 60 days. Aged 90 days, the cheese develops a deeper and nuttier flavor than the younger Pecorino di Pienza Rossa. Use this cheese as a table cheese or instead of Parmigiano as a grating cheese.
