Allspice is the dried unripe fruit (berries) of the evergreen pimiento tree. Its an important ingredient in the jerk seasonings of Caribbean cuisine and used often to flavor stews and meat dishes in many Middle Eastern cuisines. The name "allspice" was coined as early as 1621 by the English, who thought it combined the flavors of cinnamon, nutmeg and cloves.
