Taragna is a traditional Italian blend of buckwheat and cornmeal and in this case, both are organic and stone ground at the Marino family mill in Cossano Belbo, Italy.

The cornmeal they use is called otto file which is the same variety as the traditional American eight row flint corn. This is an heirloom variety which was originally cultivated for its full corn flavor and deep golden color, but as it was not a high-yielding corn plant, it lost out to the less-flavorful corn that fills the market today.

This 8 row corn is blended with the buckwheat flour for a variation on polenta and can be cooked in much the same way - slowly, gently and with much stirring (usually about 45 minutes minimum).
