Tomme Crayeuse is a recent arrival in the world of French cheese. In 1995, affineur Max Schmidhauser created this recipe to create a new tomme cheese that could stand up on its own against other more familiar tommes such as Tomme de Savoie. It has many similarities to the other tommes of the region, but it stands apart for its outstanding boldness of flavors.
As with many of the Savoie tommes, earth is a large component of the rind, the aroma and the flavor. Crayeuse allows the milk to come to the fore with a dense, creamy texture and full flavors of cream, hay, herbs, damp cellar and when fully ripe, more complex notes of salt and nuts.
